Salting Ground Meat
I hate it when recipes tell you to "salt to taste" when the ingredients contain raw meat.... A good rule of thumb is 1 tsp kosher salt per lb of meat. 3/4 tsp if you prefer a less salty taste. If you are adding in veggies, those will usually also need 1 tsp per lb, but that can vary depending on other ingredients.
Coconut Cream
Turn a can of coconut milk upside down (without shaking!). Open and pour out coconut water; reserve for another use. Coconut cream is left at the bottom.
Cheap Grass-Fed Ground Beef
I hate the taste of almost all grassfed ground beef. And the price. So I cheat. I cook regular grocery store beef, and drain the fat. Then I add in Beef Tallow from US Wellness (about 1 Tbsp per lb). Yummy.
